(NJFDMA) Recipe: Gazpacho

Gazpacho
Serves 6

Description:
A cold soup is a refreshing summer meal. Tomatoes are the main ingredient, but scallions and cucumbers give this soup body and bite.

Ingredients:

  • 4 large ripe tomatoes
  • 2 ½ cucumbers
  • 1 large green pepper
  • 8 scallions
  • 1 or 2 cloves garlic
  • Salt
  • ¼ cup red wine vinegar
  • 3 cup V-8 juice
  • Worcestershire sauce
  • Freshly ground pepper

Directions:
Peel, seed, and chop in ¼-inch pieces the tomatoes, and 2 of the cucumbers. Wash and trim the pepper and scallions and chop into ¼-inch pieces. In a small bowl, combine finely chopped garlic, 1 teaspoon salt, vinegar and oil; beat.

Combine this dressing with the chopped vegetables and stir in the V-8 juice. Add more V-8 to the consistency you prefer. Season with a dash or two of Worcestershire sauce, pepper, and salt. Chill.

Slice ½ cucumber for garnish on top. Serve.
